  • 4 medium Zucchini
  • 2 Eggs
  • 1/4 cup Parmesan Cheese (grated)
  • 1/2 teaspoon Black Pepper
  • 1/2 teaspoon Onion Powder
  • 1 Tablespoon Italian Seasoning (divided)
  • 1 Bell Pepper (chopped)
  • 1 Yellow Onion (chopped)
  • 4 cloves Garlic (minced)
  • 1 lb. Ground Turkey
  • 2 cups Marinara Sauce
  • 2 cups Mozzarella Cheese (shredded)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Grate the zucchini and drain excess moisture using a colander.
  3. In a large mixing bowl, combine grated zucchini, eggs, parmesan cheese, black pepper, onion powder, and half of the Italian seasoning; mix well.
  4. Press the mixture into a greased 9×13 baking pan and bake for about 20 minutes until set.
  5. In a skillet, sauté chopped onion and bell pepper in olive oil until soft; add garlic and ground turkey, cooking until no longer pink. Stir in marinara sauce and remaining seasoning.
  6. Spread the turkey mixture over the baked zucchini base, top with mozzarella cheese, and bake for an additional 20 minutes until bubbly.
