  • 1 1/2 lbs large shrimp, peeled and deveined
  • 1 lb medium thickness asparagus, woody ends trimmed
  • 4 tsp minced garlic (about 4 cloves)
  • 6 Tbsp butter, diced
  • 2 Tbsp dry white apple vinegar or chicken broth
  • 2 tsp lemon zest
  • 1 1/2 Tbsp fresh lemon juice
  • Salt and pepper to taste

Instructions

  1. Preheat your grill to medium-high heat (400 – 425°F).
  2. Cut four sheets of heavy-duty aluminum foil (14 x 12 inches).
  3. Divide shrimp among the foil packs, placing asparagus on one side.
  4. Drizzle vinegar over each pack and sprinkle with minced garlic, lemon zest, salt, and pepper.
  5. Place butter cubes evenly on top of the shrimp and asparagus.
  6. Fold the foil packs securely but leave space for steam.
  7. Grill sealed side up for about 9 – 10 minutes until shrimp are cooked through.
  8. Carefully unwrap each packet, drizzle with lemon juice, and serve hot.
