  • ¾ cup granulated sugar

  • 1 tsp vanilla extract
  • 1 ¼ cups all-purpose flour
  • ½ tsp baking powder
  • ¼ tsp salt
  • ½ cup brown sugar (for topping)
  • 2 tbsp melted butter (for topping)
  • Pineapple rings (cut into pieces)
  • Maraschino cherries (halved)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, cream together softened butter and granulated sugar until light and fluffy.
  3. Add the egg and vanilla extract; mix until well combined.
  4. In another bowl, whisk together flour, baking powder, and salt; then gradually incorporate into the wet mixture until just combined.
  5. For the topping, mix melted butter and brown sugar in a small bowl.
  6. Spoon about 1 teaspoon of the brown sugar mixture onto the lined baking sheet.
  7. Add pineapple pieces on top followed by half a maraschino cherry.
  8. Scoop about 1½ tablespoons of cookie dough over each topping base and gently press down to cover.
  9. Bake for about 12-15 minutes or until golden around the edges.
  10. Allow cooling before flipping each cookie upside-down to reveal their beautiful toppings.
