  • 45 lbs bone-in chicken pieces
  • 1 cup buttermilk
  • 1 cup flour
  • 1 cup Panko breadcrumbs
  • 1/2 tsp baking powder
  • 1 tsp celery salt
  • 1 tsp kosher salt
  • 1 tsp garlic powder
  • 1 tsp black pepper
  • 1 tsp white pepper
  • 1 tsp dried mustard
  • 1 tsp paprika
  • 1 tsp ground ginger
  • 1 tsp Italian seasoning
  • 4 tbsp melted butter

Instructions

  1. Marinate chicken in buttermilk for at least 30 minutes (up to 6 hours) in a sealed plastic bag.
  2. Preheat oven to 425°F. In a bowl, whisk together flour, Panko breadcrumbs, baking powder, and spices.
  3. Heat a non-glass baking dish in the oven for 15 minutes.
  4. Remove the dish and pour in melted butter. Coat marinated chicken pieces with the flour mixture before arranging them in the dish.
  5. Bake for 12 minutes on one side; flip and bake another 12 minutes until reaching an internal temperature of 165°F.
