  • 3 large eggs
  • 1 cup milk (or vanilla almond milk)
  • ½ cup vegetable oil
  • 1 tablespoon orange zest
  • 3.4 ounces orange JELLO
  • ⅓ cup fresh orange juice
  • 15 ounces mandarin oranges (for topping)
  • 3.5 ounces vanilla instant pudding mix
  • 8 ounces Cool Whip

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13 inch baking dish.
  2. In a mixing bowl, combine cake mix, eggs, milk, vegetable oil, and orange zest; mix until smooth.
  3. Bake for about 28 minutes or until a toothpick comes out clean.
  4. Dissolve orange JELLO in boiling water; stir in orange juice.
  5. Poke holes in the cooled cake and pour the JELLO mixture over it.
  6. Chill for at least two hours.
  7. Combine vanilla pudding mix with Cool Whip; spread over cake and top with mandarin oranges before serving.
