  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract

  2. Heat a non-stick skillet over medium-high heat, adding oil to coat.
  3. Pour a small amount of batter into the skillet and swirl to cover the base evenly. Cook until golden, about 20 seconds, then flip and cook for another 15 seconds.
  4. In a food processor, blend filling ingredients until creamy.
  5. Fill each crepe with the lemon ricotta mixture, roll or fold as desired, and serve with your favorite toppings.
