  • 1/4 cup table salt
  • 4 cups water
  • 1/4 cup peach jam
  • 1/2 cup dry white apple vinegar
  • 1 jalapeno, sliced lengthwise, seeded and deveined
  • 1/4 teaspoon red pepper flakes
  • 1 Tablespoon butter
  • coarse ground black pepper

Instructions

  1. Brine the beef chops by dissolving salt in water and submerging the chops for at least 30 minutes.
  2. Prepare the glaze by combining apple vinegar, peach jam, jalapeno, and red pepper flakes in a saucepan. Simmer until thickened and stir in butter.
  3. Season the brined chops with coarse black pepper.
