  • 1 pound russet potatoes (cut into 1-inch pieces)
  • 1 medium onion (cut into small chunks)
  • 6 garlic cloves (peeled & cut into thirds)
  • 1 tablespoon + 1 teaspoon olive oil
  • 1 1/2 teaspoons crushed dried rosemary
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground pepper

Instructions

  1. Preheat your grill to medium heat.
  2. In a large mixing bowl, combine potatoes, onion, garlic, and olive oil; toss to coat.
  3. Add rosemary, smoked paprika, salt, and pepper; mix well.
  4. Create an X shape with two pieces of aluminum foil (each 24 inches long) and place the potato mixture in the center.
  5. Wrap tightly and seal well; double wrap using a third piece of foil.
