  • 4 pounds boneless skinless chicken thighs or breasts
  • 1 cup unsweetened pineapple juice
  • ½ cup soy sauce
  • ½ cup brown sugar
  • ⅓ cup ketchup
  • ¼ cup chicken broth
  • 2 teaspoons freshly grated ginger
  • 1½ teaspoons minced garlic

Instructions

  1. In a medium bowl, whisk together the pineapple juice, soy sauce, brown sugar, ketchup, chicken broth, ginger, and garlic to create the marinade.
  2. Reserve 1 cup of the marinade for basting. Add the remaining marinade and chicken to a ziplock bag. Seal and marinate in the refrigerator for at least 3 hours or overnight.
  3. Preheat the grill to medium heat. Place the marinated chicken on the grill and cook for 6-8 minutes on each side until reaching an internal temperature of 165°F. Baste with reserved marinade during the last five minutes.
  4. Garnish with sliced green onions if desired and serve hot.
