  • 1 large piece of flank steak (3 lbs)
  • 1/3 cup fresh lime juice
  • 1/4 cup olive oil
  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tbsp soy sauce
  • 1/2 tsp ground chipotle chile powder (or hot sauce)
  • Optional: 2 tsp lime zest

Instructions

  1. In a mixing bowl, whisk together all marinade ingredients until combined.
  2. Place the flank steak in a Ziploc bag and pour the marinade over it. Seal and refrigerate for at least 8 hours or up to 24 hours.
  3. Remove from the refrigerator and let it come to room temperature.
  4. Preheat your grill to medium-high heat, oiling the grates.
  5. Grill the steak for about 4-5 minutes per side for medium rare or about 6 minutes per side for medium doneness.
  6. Check doneness with an instant-read thermometer (140-145°F for medium rare).
  7. Let rest for about 5 minutes before slicing against the grain.
