  • ½ cup all-purpose flour
  • 2 large eggs (beaten)
  • ⅓ cup shredded cheese (Cheddar or Parmesan)
  • 1 tablespoon chopped chives
  • Olive oil (for frying)

Instructions

  1. Prepare the zucchini by tossing it with salt in a colander and letting it sit for 10 minutes to drain excess moisture. Squeeze out any remaining liquid using a clean tea towel.
  2. In a medium bowl, mix the flour, beaten eggs, cheese, chives, salt, and pepper until smooth. Fold in the prepared zucchini until combined.
  3. Heat olive oil in a large skillet over medium-high heat. Drop tablespoonfuls of batter into the skillet and flatten slightly with a spoon. Fry for about 2 minutes on each side until crisp and golden brown.
