  • 1/2 tsp salt (divided)
  • Avocado oil spray (or 1 to 2 tsp liquid oil)
  • 1 tsp smoked paprika
  • 1/4 tsp ground pepper

Instructions

  1. Preheat the oven to 225F and line two baking sheets with parchment paper.
  2. Slice the zucchini crosswise into 1/8 inch thick slices using a mandolin slicer or food processor.
  3. Layer zucchini in a colander, sprinkling with salt between layers, and let drain for one hour.
  4. Pat zucchini slices dry with a tea towel and lay them on the baking sheets without overlapping.
  5. Lightly spray with avocado oil and season with smoked paprika, ground pepper, and remaining salt.
  6. Bake for 70 to 90 minutes until crisp, rotating sheets halfway through baking.
  7. Let cool slightly before serving; enjoy immediately.
